Vannila
Of course I don’t make the standard synthetic version. I’m using the natural Vanilla seed or pod for my candies – yes, it is one of my most expensive natural ingredients in candies, but it is worth it!
These candies are whimsy to handle using standard cooking methods and require a lot of attention. Therefore the major ingredient in these candies is patience and accuracy.
Vanilla candies can be made in two versions: a light, very gentle taste of vanilla or a strong one. The light version uses a small amount of vanilla seeds as can be seen below, using only the vanilla pod seeds. To harvest these seeds just cut along the pod length with a sharp knife and scrape with the blade each half to harvest the seeds. You will get a small amount of seeds and that will look like a small sticky black drop.
Not all people like it but I do prefer a much richer and intense flavor (which I like). Using the entire pod results in rich and intensely flavored vanilla candies (in this case, lollipops, seen below).
