Cherry hard candies

I LOVE cherry candies.

One small problem: It takes me 6 HOURS to make a batch: First I need to dry them at 70C in an oven for 5-5.5 hours while mixing them occasionally (and monitoring the oven temperature constantly). Then I can make the candies!

THAT is no fun… not for a 70gr batch of candies.

So this is sweet mission impossible no. 1 – to make cherry hard candies the easy way.

To this end I’ve utilized my solar dehydrator and placed the organic cherry jam (we get cherries only in season and drying them isn’t successful… ). After four days  – in which I do NOT need to monitor – the jam is dehydrated, very thick, very sticky and ready to go.

The results?

The results are good and getting better. Not perfect, getting better.
