My kids LOVE strawberries – so I’ve made them some natural sour sticks.<\/p>\n

Sour sticks, sour power, sour strap or strap candy – are all names for soft, usually sour, candies. I’ve decided to make my own, as usual, from natural ingredients.<\/p>\n

Here is my way of making strawberry flavored sour sticks:<\/p>\n

<\/iframe><\/p>\n<h2><a name=\"_Toc100403736\"><\/a>Strawberry sour sticks<\/h2>\nUtensils required:<\/em><\/strong><\/p>\n<ul>\n<li>1\/2 liter pot, stainless recommended<\/li>\n<li>A long handle mixing spoon (use wood or stainless \u2013 not plastic!)<\/li>\n<li>Candy thermometer or laser thermometer (don\u2019t have any? \u2013 read this and do without!)<\/li>\n<li>Digital or mechanical weight 1-0.01gram accuracy (not crucial but very useful)<\/li>\n<li>A measuring cups and spoons set is very useful (but not a must!)<\/li>\n<li>Parchment paper \u2013 1\/4 sheet will do<\/li>\n<li>Powdered sugar (if you blend sugar yourself add 2% cornstarch)<\/li>\n<li>Candy cutting bar \u2013 any cheap aluminum or stainless bar will do (or the back of a thick knife, but be careful!).<\/li>\n<\/ul>\n\u00a0<\/em><\/strong><\/p>\nIngredients<\/em><\/strong><\/p>\n1\/4\u2019th cups of sugar<\/p>\n1\/4’th cups of corn syrup<\/p>\n1 spoon of water<\/p>\n25grams of Strawberry jam, organic<\/p>\n21 grams potato flour<\/p>\n1 \u00bd liter pot<\/p>\nProtocol<\/em><\/strong><\/p>\nMix all the ingredients except for the flour in the pot. Break the full fruits in the jam, as much as possible, using the spoon.<\/p>\nCook on a small burner on medium heat until the mix reaches 121\u00b0C or 250\u00b0F. A good laser or candy thermometer is vital. As you reach the critical temperature \u2013 lower the heat and cook on a small flame. Once you have reached the right temperature \u2013 turn the heat off and add the potato flour. Mix well and be sure to incorporate all of it. Do not allow bubbles of flour to float in the candy. No rush \u2013 it will take the candy quite some time to cool down and harden so take your time and be thorough.<\/p>\nOnce ready, pour onto parchment paper and allow to cool.<\/p>\nOnce cold \u2013 sprinkle sugar powder or icing sugar (same thing) onto the candy and roll it with a baking roller till it\u2019s flat enough for your liking.<\/p>\nOnce done, cut using a good pair of scissors or a round pizza cutter to strips. Store the strips (and powdered sugar used in the process) in an airtight flat-bottom box. A layer of parchment paper between the layers helps separate the layers from sticking.<\/p>\nEnjoy\u2026 and leave some for the kids.<\/p>\nNotes:<\/p>\n<ul>\n<li>In cold weather \u2013 the candy will stiffen up \u2013 but once held in the mouth for a minute will soften again.<\/li>\n<li>These candies do not contain margarine \u2013 so they will harden over time as sugar crystals grow in them.<\/li>\n<li>If you like your candies softer \u2013 lower the amount of potato flour and vice versa.<\/li>\n<\/ul>\nWarning<\/strong>: Hot candy is dangerous.
